Ingredients

  • 2 lbs sirloin steak (or ribeye)
  • 2 tbsp olive oil
  • 2–3 tbsp Saltwater Smoke Dust
  • 1 tsp coarse sea salt (optional)
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice
  • Flaky salt for garnish
  • Grilled lemon halves (optional)

Tools Needed

  • UDS, grill, or cast iron skillet
  • Tongs
  • Cutting board
  • Sharp knife
  • Small saucepan
  • Instant read thermometer

Directions

1
Prep the Steak

Cut steak into 1.5–2 inch cubes. Pat dry with paper towels, then lightly coat with olive oil. Generously apply Saltwater Smoke Dust on all sides until fully coated.

2
Get Heat Dialed In

Fire up your grill, UDS, or cast iron skillet to 400–450°F. High heat is the key to building the signature black crust and locking in juices.

3
Sear Hard

Cook steak bites over direct heat for 2–3 minutes per side, rotating to sear all edges evenly. Cook until medium-rare to medium for best texture.

4
Make Garlic Butter

Melt butter in a saucepan over medium heat. Add garlic and cook 30–45 seconds until fragrant. Remove from heat and stir in parsley and lemon juice.

5
Finish & Serve

Drizzle garlic butter over the steak bites immediately after cooking. Toss gently, garnish with flaky salt and grilled lemon, and serve hot.

Pitmaster Tip 🔥

Want the perfect black crust? Let the steak sit with Saltwater Smoke Dust for 10–15 minutes before cooking. The moisture from the meat helps the ultra-fine rub adhere and creates an even deeper bark during the sear.
